Here’s an easy creamy salad dressing similar to ranch. You can use regular homemade SCD yogurt for a pourable dressing, or use SCD yogurt made with half & half, which has thicker sour cream type texture, for dips.
For those following a Keto diet, use the homemade SCD yogurt with the latter. However, SCD yogurt made with regular milk might also be Keto friendly. Unlike store bought yogurt which is incubated 4 – 6 hours, SCD yogurt is homemade and incubated for 24-32 hours, which gives the bacteria more time to eat the lactose, so it is scant in milk sugar.
I have always been a fan of rich and creamy dishes, so I keep a container of the half & half yogurt in my fridge. I call it yogurt cream, because it is similar to sour cream, only more delicious. I use it for dips, dressings, soups, and desserts.

The ingredients are simple and this takes about 5 – 10 minutes to make.

Mince a scallion and stir it into the yogurt.

Then prepare the dill. Pull the feathery fronds off of the main stem, (discard the stem), then chop the leaves to preferred size. Add to the yogurt with the lemon juice and extra virgin olive oil and stir. Add salt and fresh cracked pepper to taste.

Pour on your salad or salmon and enjoy! Or serve with vegetable crudities. Will keep about 4 days in a mason jar refrigerated, so you can make it on your meal prep day and enjoy it the next couple of days. Just stir before using.
